Citrus-marinated beef skewers

Overnight citrus-garlic marinade, 8 minutes on the campfire grate. Works for chicken or halloumi.

Citrus-marinated beef skewers — overnight marinade, 8 minutes on the campfire grate. Works equally well with chicken thighs.

Ingredients

  • 600 g beef sirloin, cut in 3 cm cubes
  • 2 bell peppers (red + yellow), 3 cm pieces
  • 1 red onion, in 8 wedges
  • 1 zucchini, sliced thick
  • Marinade: juice + zest of 1 orange + 1 lime, 3 tbsp olive oil, 3 garlic cloves minced, 1 tbsp soy sauce, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp honey, salt, pepper
  • Bamboo skewers, soaked 30 min in water

Instructions

  1. Whisk marinade ingredients in a large zip bag or container.
  2. Add beef cubes. Marinate 4 hours minimum, ideally overnight.
  3. Thread beef + vegetables alternately on skewers.
  4. Preheat campfire grate over hot embers (or grill at 200 °C / 400 °F).
  5. Grill 2 minutes per side, four sides, for medium-rare. 10 min total.
  6. Rest 3 minutes on a board. Serve with the campfire-warmed marinade reduced as sauce.

Notes

  • Chicken version: swap to thigh meat; marinate 2 hours; add 2 minutes cooking time.
  • Vegetarian: halloumi cubes + same marinade, same cooking time.
  • Heat distribution: push embers to one side of the fire ring for a hot side and cool side.
